We asked General Manager Tom Sykes what makes Bathers’ so enduring, and how atmosphere plays a part in shaping every visit.

Bathers’ Pavilion is such a well-loved destination. What do you think makes it continue to resonate with guests today?
The most obvious drawcard here is the view. It really is one of the best locations and unrivalled restaurants in Sydney, with its north-facing views out through the heads and proximity to the beach.
And beyond the setting, what else keeps people coming back?
The Bathers’ Pavilion also has a long history, one that transcends families across generations of special occasions and memories, placing it at the forefront of people’s minds when they want to entertain in style. Additionally, and most importantly, Bathers’ Pavilion prides itself on its food, beverage, and service offerings across three restaurants and a takeaway kiosk, which offer something for everyone and consistently over-deliver on quality at all levels.

When it comes to atmosphere, what kind of experience do you aim to create for your guests?
We aim to create the best beachside atmosphere for our guests at all levels of dining, from our casual all-day bistro through to our two-hat award-winning restaurant. By day, the view speaks for itself, so our focus is on beautiful quality ingredients matched with great wine, drinks, and friendly, efficient service.
How does lighting support that experience?
As the sun sets, we have multiple settings programmed into our system to dim and mood the venue at the various stages of sunset through until after dark. This mood lighting and timing are very important in maintaining the great atmosphere in the restaurants, and our NEOZ lamps play an important part in this. By using NEOZ table lamps, we can dim the lights a little more than usual and create individual zones per table that encompass the guest and their party, embedding a feeling of warmth and intimacy.
